Vegetable Quiche [VD#43]

This week’s video is “Vegetable Quiche”.

Egg is normally used to make quiche but you can easily make vegan version of quiche by using tofu. And also, it has a good flavor by frying vegetables and mushroom with coconut oil.

INGREDIENTS: makes 9-inch quiche

240g whole wheat flour
20g olive oil
120g water
hint of salt

100g onion
100g potatoes
50g mushroom
50g spinach
2 tbsp coconut oil

300g tofu
1 tsp salt
2 tsp mustard
30g olives

 

INSTRUCTION:

1. Mix all the ingredients of the tart dough, spread it on tart tin and bake at 350F / 180C for 10 minutes.

2. Fry vegetables and mushroom with coconut oil, mix with the remaining ingredients

3. Put the mixture on the tart dough and bake at 350F / 180C for 30 to 40 minutes.
